My Pinterest Menu: Week of May 12th

After this weekend, I got pretty spoiled and did not have to cook even one meal.  Lots of great food...


lots : )


But now, it's time to get back to reality.  And I have picked out some great looking recipes. Here, in Charlotte, we jumped right into Summer, so I wanted to try out a few lighter recipes this week.  

I am excited about the Grilled Honey Orange Chicken Salad.  Even though everyone knows that apples and pork go together, I have never made them together myself.  The Apple Cinnamon Pork Chops look too good to pass up though, so this week I will be trying them out.

The Grocery List:

Roasted Garlic and Lemon Rigatoni with Browned Butter and Gruyere-
1 head of garlic, bottom cut off
1 pound rigatoni pasta
*reserve 1/3 cup of the pasta water
5 tablespoons butter, browned
1/4 cup fresh parsley
2 lemons, zest and juice; divided
1 cup fresh grated gruyere cheese, plus more for sprinkling
1/4 cup extra virgin olive oil
Salt and pepper to taste
Crushed red pepper for sprinkling

Grilled Honey-Orange Chicken Salad-
pound skinless, boneless chicken breast halves (about 3)
teaspoons finely shredded orange peel
1/3 cup orange juice
cloves garlic, minced 
tablespoons honey
1 1/2 teaspoons dried thyme, crushed
1/2 teaspoon salt
1/4 teaspoon ground black pepper
tablespoons olive oil
tablespoons white wine vinegar
tablespoons orange juice
cloves garlic, minced
1 1/2 teaspoons finely chopped shallot
cups torn baby salad greens
medium red sweet pepper, thinly sliced
medium oranges, peeled and sectioned
Sliced almonds, toasted (optional)

Apple Cinnamon Pork Chops-
4 Ribeye (rib) pork chops, bone-in, about 3/4-inch thick
Salt and pepper
3 tablespoons butter, divided
2 apples, peeled (optional), cored and thinly sliced
1 large white onion, halved and thinly sliced
2 tablespoons packed brown sugar
2 teaspoons ground cinnamon
Pinch ground cayenne pepper
2/3 cup apple cider
1/3 cup heavy cream

5 Ingredient Black Bean Soup-
3 (15 oz) cans black beans, with liquid
1 lb. (about 2.5 cups) good-quality salsa, homemade or store-bought 
1/2 cup chopped fresh cilantro, loosely packed (plus extra for garnish)
2 tsp. ground cumin
1 clove garlic, minced

Double Crunch Honey Garlic Chicken-
large boneless skinless chicken breasts
2 cups flour
4 tsp salt
4 tsp black pepper
3 tbsp ground ginger
1 tbsp freshly ground nutmeg
2 tsp ground thyme
2 tsp ground sage
2 tbsp paprika
1 tsp cayenne pepper
4 eggs
8 tbsp water
2 tbsp olive oil
3-4 cloves minced garlic
1 cup honey
1/4 cup soy sauce (low sodium soy sauce is best)
1 tsp ground black pepper
 canola oil for frying

My Pinterest Menu: Week of May 5th

We're going to kick off the week with Carne Asada Tacos to celebrate Cinco de Mayo.  Feel free to toss in a couple margaritas too : )  I love that all the recipes this week look super simple to make, but I love all the color even more!  It's easy to get excited about dinner when it looks so good! 

Some favorites from last week were the Spring Chopped Salad and the Garlic-Yogurt Baked Chicken.

The Grocery List:

Carne Asada Soft Tacos with Guacamole & Corn-
1/2 cup of extra virgin olive oil
2 Tbsp lime juice
1/2 tsp ground cumin
1/4 tsp freshly ground pepper
1 lb of carne asada beef or flank stank
1/2 cup finely chopped white onion
2 cloves minced garlic
2 Tbsp extra virgin olive oil
2 avocados, peeled and seeded
1 Tbsp lime juice
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
3/4 cup yellow corn
1/2 cup finely diced red bell pepper
4 soft tortilla bread

Bourbon Old Fashioned Shrimp-
1/2 cup freshly-squeezed orange juice
1/3 cup bourbon
2 teaspoons granulated sugar (or honey)
pinch of cayenne pepper
1 pound large or jumbo shrimp, raw, peeled and deveined
salt and freshly-ground black pepper
1 Tablespoon olive oil
4 cloves garlic, minced
zest of one orange
2 scallions (green onions), thinly sliced
(optional garnish: orange and lemon slices)

Skillet Rosemary Chicken-
3/4 pound small red-skinned potatoes, halved, or quartered if large
Kosher salt
2 sprigs fresh rosemary, plus 1 1/2 tablespoons leaves

2 cloves garlic, smashed

Pinch of red pepper flakes

Juice of 2 lemons (squeezed halves reserved)

2 tablespoons extra-virgin olive oil

4-6 skin-on, bone-in chicken thighs (I am going to substitute boneless chicken breasts)

10 ounces cremini mushrooms, halved


Crunchy Romaine Strawberry Salad-
1 package ramen noodles
1 cup chopped walnuts
1/4 cup butter
1/4 cup sugar
1/4 cup canola oil
2 Tablespoons red wine vinegar
1/2 teaspoon soy sauce
8 cups torn romaine lettuce
1/2 cup chopped green onions
2 cups fresh strawberries, sliced

Caprese Chicken-
4 skinless chicken breasts
kosher salt & freshly ground black pepper
2 tablespoons olive oil, divided
3 large garlic cloves, minced
2 pints cherry tomatoes, halved
10 large basil leaves, finely chopped
8 oz fresh buffalo mozzarella, sliced in 1/2 inch thick slices
balsamic vinegar, to taste

My Pinterest Menu: Week of April 28th

So with my new non-driver status, I am going to do my best, but to be honest, I don't know if I can make all of these recipes this week or not. A trip to the grocery store is greatly needed! I tried to choose some recipes that may have a few ingredients, but the directions are not complicated.  I can't do complicated right now : )

I'm excited about the Garlic-Yogurt Baked Chicken and the Spring Chopped Salad looks so light and delish! Let me know what you guys think!

Garlic-Yogurt Baked Chicken-
4 chicken breast halves
salt and fresh ground pepper, to taste
6 garlic cloves, minced
1/2 cup plain yogurt
1/2 tablespoon fresh thyme leaves
1/4 cup panko bread crumbs

Italian Chicken-
1 1/2 lbs boneless skinless chicken breasts
4-5 roma tomatoes
2 garlic cloves
1 jar un-marinated artichoke hearts
extra virgin olive oil 
S&P 
sugar 
flour 
mozzarella cheese
fresh basil 

Spring Vegetables in Lemon Goat Cheese Sauce-
1 1/2 cups potatoes, chopped
1 yellow zucchini, sliced
1 small leek, sliced thinly
1 garlic clove, chopped
2 tbsp olive oil
1/2 tsp flake salt
5 asparagus spears, chopped
5 broccolini shoots, chopped
1 tbsp butter
1 tbsp flour
1 cup broth
3 oz goat cheese
1 small lemon
chopped green onions
cashews



Chicken Marsala-
  • 1 tablespoon oil
  • 4 small chicken breasts, pounded thin and seasoned with salt and pepper
  • 1 tablespoon butter
  • 8 ounces mushrooms, sliced
  • 1 medium shallot, finely diced
  • 1 clove garlic, chopped
  • 1/2 cup marsala
  • 1 cup chicken broth
  • 2 tablespoons lemon juice (~1/2 lemon)
  • salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon parsley, chopped

Spring Chopped Salad-
5-6 cups cut, cleaned greens, cut in 1-inch ribbons (I used romaine & treviso)
1 cup blanched fresh (or frozen) peas
1 cup chopped fresh herbs (chives, mint, parsley)
4-5 radishes, chopped
1/2 avocado, diced
1 cup garbanzo beans
1 cup chopped sharp cheddar
1 cup chopped salami such as finocchiona
1/4 cup toasted pepitas
Other options: cucumber, red onion, scallion
6 tablespoons olive oil
3 tablespoons apple cider vinegar
1 tablespoon fresh lemon juice
1 garlic clove, minced

My Pinterest Menu: Week of April 7th

I am crazy excited about this week's menu!  Looking on it now, I am amazed by all the color. I'm going to blame it on the fact that Spring is finally here, because everything in my life lately has been all about color. Obviously, the food is no different : )

When I saw the recipes for the Beef Burgers with Bacon Jam and Gorgonzola, I think my mouth hit the floor. I chose Wednesday for this meal for a reason.  Jason's birthday is Wednesday, and I think he is going to LOVE this meal!  I'm also excited about the 5 ingredient Easy White Chicken Chili.  Sometimes, I need easy and Tuesday is looking very busy already, so I don't want an excuse to eat out.  Easy recipes are what I need on the busiest of days, and this one looks SUPER good.  So without further ado...

The Grocery List:

Spaghetti Carbonara-
1 lb. spaghetti
1/2 large onion, diced (about 1 cup)
1/2 lb. bacon (regular or turkey bacon), diced
5 eggs
1/4 cup milk
1/4 cup parmesan (or more)
1 tsp. freshly ground black pepper
olive oil

5 ingredient Easy White Chicken Chili-
6 cups chicken broth
4 cups cooked shredded chicken
2 (15-oz) cans Great Northern beans, drained
2 cups salsa verde (storebought or homemade)
2 tsp. ground cumin
optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips

Beef Burgers with Bacon Jam and Gorgonzola-
1 lb. streaky bacon, roughly chopped
4 large red onions, peeled and roughly chopped
4 garlic cloves, crushed
1 bay leaf
2 tsp smoked paprika
1 tsp salt
1/3 cup (60ml) Balsamic vinegar
1 cup soft brown sugar (I used Muscavado)
1 cup apple juice
1 cup water
1/2 red onion, finely chopped
2 garlic cloves, crushed
1 lb. lean beef mince (ground beef)
1/2 cup bread crumbs
1 egg
1.5 tsp salt
1 tsp pepper
fresh breadrolls
lettuce
thin slices of red onion
Gorgonzola, crumbled


Saffron Chicken and Herb Salad-
1 orange
1/4 c. honey
1 tsp saffron threads
1 tbsp white wine vinegar
1 and 1/4 c. water
2lbs. skinless chicken breast
4 tbsp olive oil
2 small fennel bulbs, thinly sliced
1 tbsp picked coriander leaves
1 tbsp picked basil leaves, torn
1 tbsp picked mint leaves, torn
2 tbsp lemon juice
1 red chilli, thinly sliced
1 garlic clove, crushed
salt and black pepper


Cilantro Lime Baked Shrimp-
2 lb. raw shrimp, peeled and deveined
3 cloves garlic, minced
zest and juice of 1 lime
1/2 tsp. cumin
salt and pepper
2 Tbsp. melted butter
1/4 cup Panko bread crumbs
1/4 cup chopped fresh cilantro
(optional garnishes: additional lime slices and fresh cilantro)

My Pinterest Menu: Week of March 31st

Each week, I have been finding some amazing recipes.  And I have high hopes for this week too...especially the Fish Chowder with Old Bay Sourdough Croutons!  I have only had fish chowder a couple of times but the recipe I have included in this week's menu looks amazing.

Last week, the Autumn Arugula Salad did not disappoint, even though I had some trouble finding acorn squash...may be because it is now Spring : )  It sure does not feel like it though.  Another recipe I really like was the Chicken and Sweet Pepper Alfredo Linguine.

The Grocery List:

Chicken and Asparagus Stir-Fry-
1 Tbsp. soy sauce
1 Tbsp. honey
2 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1-inch)
1 Tbsp. olive oil
1 bunch asparagus, cut into bite-sized pieces
4 cloves garlic, thinly sliced
2 scallions, chopped
2 tsp. toasted sesame oil
(optional) 1 tsp. toasted sesame seeds

Fish Chowder with Old Bay Sourdough Croutons-
4 cups {doesn't have to be exact} cubed Sourdough Bread
2-4 tablespoons Olive Oil
1 tablespoon Old Bay Seasoning
4 strips of Applewood Bacon, diced into cubes
1 large or 2 medium Yellow Onions, chopped
1 pound Red Skinned Potatoes, peeled and chopped into 3/4 to 1 inch pieces
1/2 cup Sauvignon Blanc
2 cups Clam Juice
1-1/2 tablespoons Fresh Thyme Leaves
1 teaspoons Kosher Salt, plus more to taste
1/4 teaspoon {heaping} Freshly Ground Black Pepper
1 large or 2 small Bay Leaves
1-1/4 {heaping} teaspoon Old Bay Seasoning
1 to 1-1/2 pounds Barramundi Fillets, cut into 1 to 2 inch pieces {skin removed}
1-1/4 cup Heavy Cream
1/4 cup chopped Fresh Flat Leaf Parsley

Perfect Pork Chops- 
2 tablespoons vegetable oil 
2 two-inch bone-in, center cut pork chops 
3 tablespoons butter 
2 unpeeled garlic cloves, smashed 
3 sprigs of fresh thyme

Green Bean, Mushroom and Caramelized Onion Tart-
2 tablespoons butter
8 ounces mushrooms, sliced
1 small onion, sliced
1 clove garlic, chopped
1/2 teaspoon thyme, chopped
1/4 cup dry white wine or chicken broth or vegetable broth
salt and pepper to taste
1/2 pound green beans
1 sheet puff pastry, thawed as directed on package
1/4 cup blue cheese, crumbled

Lemon Chicken Romano-
2 (8 oz) boneless, skinless chicken breasts
2 oz shredded Whole Milk Mozzarella cheese (1/2 cup)
2 oz shredded Provolone cheese (1/2 cup)
1 large egg
1 Tbsp all-purpose flour
1/2 cup Panko bread crumbs
1 1/2 oz finely shredded Romano cheese (1/2 cup)
1 Tbsp chopped fresh oregano
Zest of 1 lemon (2 tsp)
1/2 tsp garlic powder
Salt and freshly ground black pepper
2 1/2 Tbsp vegetable oil
2 1/2 Tbsp extra virgin olive oil
Lemon slices or wedges for serving (you can just use the one that was zested)

My Pinterest Menu: Week of March 24th

I was feeling like moving to more of a Spring inspired menu this week...until yesterday.  Winter seems to be determined to stick around a little longer, so instead of fighting it, I'm going to go with it.  I am cooking up some of the more comforting foods I have on Pinterest this week.  I am really excited about the Autumn Arugula Salad.  Maybe a little too excited : )

Some hits from last week were the Bangers and Colcannon with Guinness Onion Gravy and the Honey Lime Tequila Shrimp Tacos. Both were super good!

  • Vegetable oil
    1/2 teaspoon minced fresh ginger

    1 10 oz. container refrigerated light Alfredo pasta sauce
    1/3 c finely shredded Parmesan, Romano or Asiago cheese
    2 tsp snipped fresh thyme
    1/8 tsp freshly ground black pepper
  • Guinness Beef Stew with Cheddar Herb Dumplings-
    2 lbs stew meat / beef chunk
    ¼ lb applewood-smoked bacon
    1 onion, finely chopped
    1 stick celery, chopped
    2 carrots, peeled and chopped
    2 cloves garlic, thinly sliced
    2 turnips, peeled and diced
    2 parsnips, diced
    4 oz tomato paste
    12 oz Guinness extra stout
