I have found some great recipes the last couple of weeks. Some highlights from last week are the Artichoke, Chicken & Spinach Lasagna (I added a little more salt to the sauce than the recipe called for, which was perfect for me) and I LOVED the Chicken Piccata. It was a huge hit with the family. And last, but not least, the Autumn Chopped Salad (which I added chicken to) was amazing.
This week, I can't wait to try the Thai Beef Tacos and the Aloha Burgers!

Grocery List:
Thai Beef Tacos-
1 and 1/2 lbs. flank steak
1 tsp salt
1 tsp pepper
3/4 c light coconut milk
1 Tbsp sesame oil
4 garlic cloves, minced or pressed
2 tsp freshly grated ginger
2 Tbsp brown sugar
5 Tbsp freshly chopped cilantro
1 c. sweet chili sauce
1/2 mango
1 shallot
1 jalapeno
2 Tbsp
1 tsp. canola oil
8-10 corn tortillas
1/4 c. peanuts
sprinkle each of sugar, salt and pepper
green leaf or romaine lettuce
Zuppa Toscana-
1 pound ground Italian sausage
1 1/4 teaspoons crushed red pepper
4-6 slices bacon, cooked and cut into pieces
1 large onion, diced
1 tablespoon minced garlic
5 (13.75 ounce) cans chicken broth
3-4 medium potatoes, peeled and thinly sliced
1 cup heavy cream
1/4 bunch kale, coarsley chopped (swiss chard can be substituted)
Aloha Burgers-
1-1/2 pound ground chuck beef (80% lean)
2/3 cups Brown Sugar Barbecue Sauce
3 Tablespoons bread crumbs
3/4 teaspoon Montreal steak seasoning
1 pkg (12 oz each) Hawaiian dinner rolls
3 slices (1 oz each) Swiss cheese
1 can (8 oz each) pineapple slices
6 slices of bacon
lettuce
Grilling Spray (such as Pam)
Santa Fe Baked Chicken-
4 boneless, skinless chicken breasts
coarse salt and fresh black pepper
1/2c. olive oil canola mayonnaise
1 and 1/2c. tortilla crumbs
1 and 1/3c. salsa
1 and 1/3c. shredded Monterey Jack or extra sharp cheddar cheese
Tilapia with Browned Butter and Lemon Sauce-
olive oil
4 Tilapia filets, thawed
4 tablespoons butter
2 lemons, sliced thinly
3 sprigs fresh rosemary
